Wageningen University in the Netherlands is a part of Wageningen UR (University & Research centre). The mission of Wageningen UR is to explore the potential of nature to improve the quality of life. They work globally with their knowledge of nature and natural processes, within the domain of ‘healthy food and living environment’ to continually improve the quality of life.
The mission of the Laboratory of the Food Microbiology group is to generate and disseminate genetic and physiological knowledge as well as knowledge of hygiene, fermentation and quantitative methods for the assurance of microbiological food safety and quality.
The knowledge of microorganisms, together with data about their presence in food products and in the environment, enables the scientists to develop models for their behaviour. These models may be used to predict shelf life and safety of food products and can be used for quantitative risk assessments.
